You can't delete default search engines. You can hide the search field in the speed dial page and disable instant search, then set one of the other built-in searches as default for the address bar and menu searches.

You don't remove it per se, you set a different one. If you don't see one you like then just find any photo online. If you right-click on it, one option will be "Use image as wallpaper".

There is a setting to bypass the VPN with search sites - maybe they apply that to Amazon?
This website tells me my ISP is "Opera mini proxy" located in the US, if I use the VPN.

Displays where? Opera itself doesn't tell you that, so where are you getting it? Note that "America" does not guarantee US, just somewhere in the Western hemisphere.

@xaunloc In Settings there is an option to check if Opera is the default browser, just turn that off.

You can't drag a maximized window anyway - and if Opera is not maximized it has enough space above the tabs to drag the window. Sorry, but arguing on the basis of dragging is not applicable.

Flags are experimental. They may be dropped if deemed not sufficiently useful, or they may be promoted to actual settings. Or replaced by something else, which may or may not be better. Most flags are actually from Chromium, and as such Opera may not even control whether it stays or goes.

Go to the Extension manager (from the menu) and click Disable to merely turn it off (as you may wish to turn it back on later), or click the "x" to remove it permanently.

Flags are for testing, once a feature is added (as in this case) or dropped the flag is removed. You still just enable it once, but in panel settings instead of flags.
