There are many ways to disable the auto-update(4 of them I think), all with different advantages and problems and all listed in the thread linked by leocg earlier.

In windows XP and 7 as well ... in the control pangel go to "scheduled tasks" and double click
then look down the list for Opera Scheduled AutoUpdate..double click on this, and then
look down at the box for a check mark in the box entitled "Enabled" click the box to "uncheck" this
option, and then click "apply" then click "OK". This disables the autoupdate option.Note: The Opera Scheduled AutoUpdate listing my be "hidden" by default, in that case look at the top of the page for the "advanced" tab and click make sure that
"show hidden updates" listing is checkmarked, if it is not click the listing to check mark it. Then it will show the Opera Auto Update listing.If you dare to update manually, all you need to do is go to the Opera tab in the upper left hand corner and then look down the list to "About Opera" Opera will automatically start to look for an update
and download it, and then install.WARNING! Do NOT click on "About Opera" if you DO NOT want an update!
