By hazard I bought my first Android Mobile. Now I intend to download Apps without giving Google full access to my Data. Ist there a way to avoid or bypass Google Play Store?

@lottototoahoi I guess the site needs to provide a link to a direct download.

@leocg , thanks for your assistance. Do you mean the website of Opera does already provide a link for downloads?
Or does Adobe provide this link?

@lottototoahoi No, Opera1s sites doesn't provide a direct link as far as I know. However you can try checking http://get.opera.com/ftp/pub/opera/android/, although it's not update often.

You need to check on Adobe site if they offer a way to download their apps directly.

You can try F-Droid as an alternative. If software authors also offer their programs for download on their own websites, the direct download mentioned by @leocg is of course also a possibility, but is usually discouraged, because malware is often foisted to you in this way (the stores check apps before including them in their catalog).

without giving Google full access to my Data.

I've set up several Samsung smartphones with Android 8 and 9, with and without creating a Google account at initial setup. I've come to the conclusion that the best compromise between privacy and convenience (for me) is to use a Google account with a fictitious name - without a Google account, for example, no malware scanning of installed apps with Google Play Protect is possible - and then limit data collection as much as possible in the Google account settings. Also, I use almost no Google services and an alternative web browser instead of Chrome. That way, you've already done a lot.

Opera does have a link at the bottom of their "Opera for Androiid" page, which links to

                  https://www.opera.com/download/get/?partner=www&product=android&utm_source=(direct)_opera_com&utm_medium=doc&utm_campaign=(direct)_via_opera_com

As I'm currently running Windows, I didn't go farther than that. And yes, I did say "the bottom of the page", just below the lower Get it on GooglePlay button. Mind, not sure what you'll need to do on your device to actually install it - on my tablet I have previously had to enable a flag in Android's Developer settings to allow non-GooglePlay installs.
