VPN Pro/Premium service?

Opera removed the ability to select countries in their free VPN feature. Do they offer now something like a VPN Pro/Premium service?

Not yet. Opera used to own the SurfEasy VPN company, but someone else has purchased it and so they had to switch the built-in VPN to use Opera's own servers instead of the former SurfEasy ones. They are still working on it.
