For transferring the settings from Opera to GX, use Sync or copy Opera's profile directory and paste it into GX's profile directory.
For bookmarks, export your bookmarks from Opera and then import them.

If the videos and streams are way too bright, you need to reset the settings to default. It would be best if you reset flags to default too. Also, please check if the night mode is enabled or not.
I will suggest you install an extension to adjust the brightness again until the problem is gone.

I think it is a common problem with all of us. Opera need to fix this issue as soon as possible.

You can install any version of Opera by visiting help.opera site > Windows > old versions. Install the old version that you want and ensure to block the auto-update so that it may not get updated to the new versions.

I can't entirely agree with the argument as Opera is offering VPN free of cost.
