There are several different versions- what do people recommend? (I am an Opera noob.)

Depends - they are intended to serve different needs. Touch is intended as a one-handed browser. It actually doesn't have bookmarks - for many people that is a deal-breaker. But if you're just visiting links people send you on FB/Twitter/whatever then it might work.
Mini is especially for phones with limited resources or limited data plans. It can be configured so that most of the processing is done on Opera's servers - but some scripts will not work as expected in that mode.
Opera browser is more the full-featured browser. Not that it doesn't also allow some compression - just not quite as much as Mini can.
The beta versions are just that - beta versions. I really don't mess with them.

For a high-end phone, of course, the best one to go for will be Opera browser, opera mini goes for you know low RAM, low memory kind of phone and also If you intend to save data. Personally, I use Opera Browser for web pages that I have to do registration kind of stuff or web pages that won't open on mini properly. Mini goes for surfing through my facebook page, I have gotten used to using mini for that. I have not dabbled with betas before so I can't talk about them.
