Opera spell checking only allows selection of English (United States)

Why would the other options be greyed out? Here, US English is deselected.

I can confirm the issue and can also confirm that it works fine in Opera.
It looks like the dictionaries are compiled into Chrome. The source for en-AU is https://cs.chromium.org/chromium/src/third_party/hunspell_dictionaries/en-AU-8-0.bdic.
Opera doesn't seem to have that one I guess. Also, in resources/dictionaries.xml, it's not listed. Chrome doesn't use anything like that.
Also, if you disable
opera://flags/#new-md-settings
to get the old settings page, set the language to English (Australia) and restart, you'll see Opera changes it to English UK on you (which isn't in the list).In short, I would guess it's just not supported by Opera.
