Both of those guides are very out of date. They are for version 12 of Opera and earlier.

Do you know of any newer guides? I haven't been able to figure it out on my own, and searching on Google only brings me to those two tutorials.

I'm not sure what you mean when you mention the command line.
As for creating multiple profiles on Windows; I'd rather not have to do that. I have a couple of YouTube channels as well as a couple of Instagram accounts and things like that that I'd like to manage without having to log in and out of them all the time.
I also don't like any other browser, so I want to be able to do this in Opera, if it's possible.

He means adding command line modifiers to the Opera shortcut. Opera uses most of the same options that Chrome does. If you google around for a bit I'm sure you could find the commands for multiple profiles for Chrome, which would work for Opera.

As I said above, that video is for an older version of Opera. It is very, very out of date and does not apply to current versions. The newer versions of Opera use the same method as Google Chrome. So it would have to be a guide written in the last year or two. That video is from 2012.

Thanks for pointing me in the right direction, guys; I got this working!
I found a post on SuperUser (http://superuser.com/a/361749) that told how to do it in Chrome, and it worked!
All I did was create new the new profile, make another Opera shortcut, then add "--user-data-dir=" and the path to the new profile and; voila!
