I want to know how Opera distinguishes between a Mobile and a Desktop user agent. I've seen many sites that doesn't work if you choose desktop agent in Opera Mobile and display the mobile version anyway. What is the browser looking in the code to switch between different sites versions??

opera doesn't choose which version it loads, the webserver does that.
opera tries to control this by saying "I'm opera for Linux desktop computers" if you enable desktop mode, but many websites either incorrectly list opera for Linux as mobile browser(send an angry letter to whoever runs the website if this happens) or they use your screen size to determine what they think is the best layout. -

Thanks for explaining why desktop view is not reliable. Any way to spoof screen size? Libre linx distro spoofed screen resolution by default to circumvent screen fingerprinting. Spyware tracks by screen resolution.

Why doesn't Opera work around this by for example pretending to be Windows client? What are restrictions for this not to happen?

Orweb browser offers option to spoof Internet Explorer. Orweb download at open source repository f-droid.org.
