Not "version 3" but "3 versions" - and you might actually have all three installed, though only one is available.
Opera installs updates in the background (meaning, while you are doing other things) then switches to the newer version the next time you run it. So if you are actually running Opera while it updates, you'll have 2 versions installed. Once you actually restart the program, you could delete the older version. Or if something went wrong you could delete the newer version and still have the older version to fall back to.
If you look in Opera's install directory, you will see several subdirectories whose names are the version number they contain. The launcher just picks the highest version number and runs that.
