I'd like to disable automatic updates for add-ons.

As far as I know, it’s not so easy. Тo disable auto-update of extensions, you need to start the Оpera with the key --disable-background-networking.
You can add this key to the Opera launch shortcut.

It is true. I tried this:

• delete opera_autoupdate file
• run opera with the parameter launcher.exe --disable-update.
  That didn't help. Only opera-udate didn't work (great!), add-ons were constantly updated.
  I'll try the key --disable-background-networking.
