For many years I was tormented with the appearance of the icon in the dock as a red icon with a white outline, solved this problem by replacing the fileo and cleaning the cache finder and dock
you need to change icns file to next
/Applications/Opera.app/Contents/Resources/app.icns
After than restart finder & dock caches
touch /Applications/Opera.app killall Finder sudo rm -rf /Library/Caches/com.apple.iconservices.store sudo killall Dock

@clevergod To change the dock icon of the Opera browser on macOS, follow these steps: 1. Prepare the New Icon
Ensure the new icon is in .icns format.
If it's a PNG or JPG, you can convert it using online tools or Preview on macOS.
2. Locate Opera in Applications
Open Finder → Go to Applications.
Find Opera.app.
3. Open Get Info Window
Right-click on Opera.app → Click Get Info (or press Cmd ⌘ + I).- Replace the Icon
Drag and drop the new .icns file onto the small Opera icon at the top left of the Get Info window.
If prompted, enter your administrator password to confirm changes. - Restart Opera & Dock
Quit Opera and remove it from the Dock (if pinned).
Open Terminal and type:
killall Dock Press Enter to restart the Dock. Now, reopen Opera, and the new icon should appear. If the icon doesn't update, try restarting your Mac.
