I find the Magic Actions for Youtube extensions very helpful and it has the option you are looking for.

Far as I know there's no way to do this besides select load plugins on demand. But youtube sucks tho, for example I have no idea why favorites are a playlist, I haven't found a way to just play one item from a playlist and not go straight to playing the next one. Very annoying

Go to 'O-Menu / Settings / Websites (Left hand list) / Plugins (Heading)' and select 'Click to play'.

Youtube autoplays by default. This isn't an Opera thing, its a Youtube thing. I doubt the devs are gonna change the way the web browser does things for one website when its already taken care of in an extension.
