How to change the default application to open a file type or protocol?

Hello,
My question is simple, How to change the defult application to open a file type or protocol? I associated my mistake the magnet: protocol (bittorrent) with an incorrect application. How I change it now? I don't see any option in setting (it existed in the past, but not now).
