Dynamic sizing issues

Hi, so, I have a fairly small screen, which I'm really happy with, but apparently websites don't trust me. I keep getting one of two issues when going to websites.

The website reads my window and assumes I'm on a tablet or otherwise want a mobile-friendly experience, so it gives me a website page with huge buttons, no columns, etc, which is obnoxious to navigate on desktop and frustrating because I like having small information that's easy to take in at a glance.

(but I can live with this if I have to) The website assumes my browser window is the full width of my screen, and sizes itself as wide as my screen. My browser window is not that wide, and so website content ends up off the edges in assorted ways depending on the website.
Is there a way to change what information a website receives about my screen size so that it's restricted to a proper desktop experience?
