Is there a possibility to use ecosia or ixquick as default search engines? Is there any reason why one restricts to the standard ones?

Same question here: Is there any way to add new default search engines myself? If not via the settings, would it be possible to do this via a plugin?

You can add search engines but you can not set them as default ones
