To complete steps you can put back Opera Mail shortcut to the Startup section of the Windows.
Then while there right click on the shortcut and in the Run section set it to Minimized. Is there any other way to start Opera Mail minimized, because whit this, it always start in normal window.

For those who installed Opera Mail as Portable app (on "USB Stick"), edit operaprefs_default.ini in operaMail folder
[User Prefs]
...(other prefs)
Show Exit Dialog=2 -

Or another very easy way:
- open new empty mail (CTRL+M)
- Paste into the body mail this:
opera:/button/Hide%20opera%2C%201%2C%2C%22Hide%20Opera%22%2C%20Opera%20Logo - Close it
- Open Drafts and find that closed mail and click on that link in it's body
- confirm adding new button
- in new opened window go to 'My Buttons' in 'Buttons' TAB
- and use drag&drop for put the newly created 'Hide Opera' button on the panel to which you want
