So assuming I find the right old version, what is the procedure to update and keep my settings?
The whole folder structure seems to have changed
Do I leave the newer one installed and try to install over (having taken a copy of the old version)
If I rename the Opera Stable folder of the current version how will it get my settings?
AND how will I turn off auto update and force it to be respected on the old version (as it forced the update today, is there a task scheduler or registy setting I need to lock down or remove.

You mean old Opera Presto (version 12 or so)? It can't import any of your current settings and IIRC won't update to newer version either.
But you may have some problems with it. I'm using Opera 10 sometimes, for speed and some other things - it doesn't support some newer cryptography (certifcates), its javascript is sometimes very slow or simply doesn't work, its rendering can be erroneus ets; maybe Opera 12 is better in this regard.
Next version (Opera 15?) was already Chromium based and is IMO not worth to install.
