I setup the separate Mail Client, but see there is no option of using plain, easy to read text and not have to remember what some hard to decipher icon is.

I looked in the 'pref' file, but don't see anything there either.

Is there a way to show the icons in all the Menu bars in text??

"Right-click on a toolbar -> customize -> appearance -> toolbars -> style drop-down" is how you do it. However, Opera Mail is unfinished and that stuff is missing. You have to manually edit ini files to do what you want or use Opera Mail in Opera 12 instead. If you use Opera 12, just goto "Alt + P -> Advanced -> Programs" and add/set http and https to "open with default application".
