I wonder if it is possible to change the dictionary from the default American English one? Many words are flagged as errors which are correctly spelled in the UK version of English. Worse, one might spell something using American English, which will appear as a mis-spelling to the English recipient.

It certainly should be.
Go to Settings>Browser>Languages>Dictionaries.
You should be able to add the English (United Kingdom) dictionary using that dialogue.
