You can delete the desktop shortcut, start menu shortcut, and pinned taskbar icon, browse to Opera's install folder in Windows Explorer (File Explorer), right-click on launcher.exe and choose "pin to taskbar" and then "Create shortcut", and then "Pin to start" to recreate all the shortcuts. And, for the shortcut, you can move it to your desktop, and rename it if you want.
