You can goto the URL opera://settings/profiles to create extra profiles. A desktop shortcut will be created for each extra profile. A pinned taskbar icon will be created for each extra profile too if you're not using Windows 11 24H2 and newer.
You can also goto the URL opera://settings/early_bird, enable Early Bird, enable just "Revived GX Profiles" and restart Opera. Then, the opera://settings/profiles page will be fancier. On that page, you'll be able to click a profile to launch it. There will also be a profile submenu when you click the Opera menu button at the top left of Opera. If you're on macOS, I think you need to enable "Revied GX Profiles" for profile support.
You can also bookmark the opera://settings/profiles page as a speed dial or to the bookmarks bar for quicker access.
You can't tie a profile to a certain workspace though.
