Your link to "block Opera's update servers" redirect to a procedure that's only for Windows.</p>
<p dir="auto">On MacOS (for this versions it was MacOS and not macOS as currently is) you can disable autoupdate for Opera stable by typing this into a terminal:</p>
<p dir="auto">defaults write com.operasoftware.Opera OPDisableAutoUpdate true</p>
<p dir="auto">If it worked, Opera will tell you "Update checker is disabled" when you go to Opera -&gt; About Opera.</p>
<p dir="auto">You must apply this Opera automatic update blocker BEFORE running Opera for the first time. Don't forget this very important step!</p>

For Opera Stable, that should be <a href="https://ftp.opera.com/pub/opera/desktop/102.0.4880.78/mac/" target="_blank" rel="noopener noreferrer nofollow ugc">102.0.4880.78</a>.</p>
<p dir="auto">Try that first. If that doesn't work, you can try <a href="https://ftp.opera.com/pub/opera/desktop/" target="_blank" rel="noopener noreferrer nofollow ugc">older builds</a> till one works. For example, <a href="https://ftp.opera.com/pub/opera/desktop/99.0.4788.9/mac/" target="_blank" rel="noopener noreferrer nofollow ugc">99.0.4788.9</a> should work if 102.0.4880.78 doesn't.</p>
<p dir="auto">Also, you might want to <a href="https://www.google.com/search?q=mac+hosts+file" target="_blank" rel="noopener noreferrer nofollow ugc">edit your Hosts file</a> first to <a href="https://www.reddit.com/r/operabrowser/wiki/opera/disable_updates_windows/#wiki_blocking_connections_to_the_update_server" target="_blank" rel="noopener noreferrer nofollow ugc">block Opera's update servers</a> just in case Opera tries to update to a newer build that doesn't support your version of macOS.</p>
<p dir="auto">Of course, you'll be stuck with an older, unsupported build with security issues and possibly bugs that will never be fixed.</p>
