I agree, I too do like Opera very much, it works better that Edge in Win11.

The only way to set the address bar search engine is to:
type opera://settings in the address bar ―> scroll down to Search engine ―> beside "Search engine" select Bing from the drop-down menu.

to set your default search engine:
type:
opera://settings in the address bar ―> scroll down to Search engine ―> click on Manage search engines and site search ―> click on the 3 dots to right pf Bing and click on Make default

For me it is a small inconvenience to pay for a quality browser.

I have loved Opera for maybe 50 years, and I hope that they will straighten this out. It seems like being bullied into Google, when, frankly, Bing is often a better factual resource.

I keep changing it to my favorite, but every 2 days it sets it back to Google. DuckDuckGo doesn't collect my data, whereas Google & co. do.
Any solution to this subterfuge?

To use a search engine other than the default, type its shortcut in the address bar followed by your preferred keyboard shortcut. You can also change your default search engine here.
