If you right-click in a blank spot, in a folder at the URL opera://bookmarks, you can choose "Sort alphabetically" at least. It's a function though and not a setting. It sorts just sorts the current bookmarks in the folder at that specific time.

You can also use keyboard shortcuts ctrl + x, ctrl + c, ctrl + v and ctrl + a respectively.

Also, if you copy a bookmark, it's actually copying its URL to the clipboard where you can then paste its URL somewhere else if you want.
