I've deleted the one handler that was there but can't add a new one.</p>

If that's not what you want, you're looking in the wrong place.</p>

<p dir="auto">we need the ability back to rightclick a page and open whatever email client we're using. like in my case outlook. now that said opera isn't the only one to remove this. honestly there was no justifiable reason to do so.</p>

However, I don't think setting a mailto handler is supported. Opera, Chrome and Chromium just use the default mailto handler on the system. As in, if you want to change the default mailto handler, you have to configure it in MacOS.</p>
<p dir="auto">I don't use a Mac, but I think you have to launch Apple Mail, goto preferences, then general. There you can change the default mail client away from Apple Mail to whatever mail client you want (that's listed in there at least). You might have to close out of Apple Mail and restart the system for it to take effect.</p>

<p dir="auto">That documentation is for the old Opera Browser suite that was based on Presto. It doesn't apply to Opera &gt; 12.x.</p>
<p dir="auto">New Opera is based on Chromium, you'll find better help looking for documentation on Chromium and or Chrome for this issue.</p>
