How many versions of Opera do I need to do everything.

Probably at least two (I use Opera 11.64 and 12.16, but still need Firefox for some stuff), but the whole point of test versions is that they are released to find bugs before they make it to final — they should not be used for real work. Never use beta software for anything important.

Use whichever final version has most of the features that you need, and test the others.
