Luckily this is as easy as tapping the status bar with the clock on the top.

I don't understand the second question entirely. The easiest way to add a site to your home screen is by dragging it up from the dock: http://www.opera.com/help/coast/ios#new

If you want to set a specific icon for it, you can do that through the share menu on the bottom left. Look for an icon with a down arrow and 9 tiles. (It's only there when you don't have the site on your home screen). Hope this helps!
